Latest Dishes!

Hey everyone, I figured it was time again to show off some of our latest creations and hopefully inspire you to try something new. If you want recipes for anything you see here leave a message in the comments and I will give you the info as best I can. Most of our creations now are things we don't use an actual recipe for which is exciting. There is something rewarding about creating a meal from you imagination. Now obviously they are all grounded in some sort of reality but it is all the little additions and things you like in your food that make the dish your own. So let's get started.

First off is an asparagus and bell pepper stir fry. This was super simple, just asparagus with garlic, red and yellow bell peppers and seasonings. Cooked in a little bit of mirin and sesame oil. Finished off with some grated Parmesan cheese.





Next up was chicken and veggies in a cream sauce with a butternut squash risotto. We browned some chicken breast pieces and then sauteed the peppers and mushrooms in some white wine. Combined the two and added a little bit of heavy cream. The risotto was time consuming but easy enough. Started with arborio rice and mashed up the butternut squash after steaming it to soften. (I did cheat and buy a package of cubed butternut squash from the produce section, sure beats cubing it yourself.) Once the rice cooked for a few minutes we added the squash mash and some white wine until it was all absorbed. Then slowly added chicken stock a little at a time until the whole thing was super creamy. I was pretty impressed with the final result below.




Don't forget the peas.

So this is a chickpea soup that I really dropped the ball on photographing but it was good enough to include just on taste alone. Pretty simple with chickpeas, diced tomatoes, garlic, S&P and rosemary. YUM!

This one was super exciting as it was a dish we have been wanting to eat in a restaurant, but we broke down and just made it for ourselves. PHO!(make an UH sound, not an OH) This one is a dish that makes my top 5. Delicious! Once again I kind of dropped the ball on photos of the process, but the final pic makes up for that. Chicken, ginger, shiitake mushrooms, onion, cilantro, lime, rice noodles, Hoisin and Sriracha.


Finally a new ingredient for both of us, swordfish. A great fish high in Omega-3 fatty acids. the steaks were marinated in lime juice, garlic and cilantro. Baked in the oven and then topped with a tomato and pesto salsa. Throw in some steamed veggies and you have a great dish.

  1. I like chickpeas. So I think I should give a hand on this reicpe of yours. I think you need to hand few greens to it to make it more healthy and tasty.

  2. I agree, we have found a great love for chickpeas and they are always great in a salad. Thanks for the suggestion. I will add them next time!!
